Central Texas Savory Red BBQ Sauce Recipe

This classic Central Texas “mop” style sauce is a far cry from the thick, sugary options you find on grocery store shelves. It is intentionally thin, vinegar-forward, and highly savory, designed to complement the rich, smoky flavor of oak-smoked beef brisket without masking it.

Prep time: 5 minutes

Cook time: 20 minutes

Yield: About 3 cups

Ingredients
1 tbsp unsalted butter

1/2 small yellow onion, finely minced

2 cloves garlic, minced

1 cup beef broth (low sodium)

1 cup ketchup

1/2 cup apple cider vinegar

2 tbsp Worcestershire sauce

1 tbsp yellow mustard

1 tbsp dark brown sugar (just enough to balance the acid, not to make it sweet)

1 tsp coarse black pepper

1 tsp chili powder

1/2 tsp ground cumin

1/2 tsp kosher salt (adjust to taste based on your beef broth)

Step-by-Step Instructions
Sauté the aromatics (3-5 mins): Melt the butter in a medium saucepan over medium heat. Add the minced onion and cook until soft and translucent, about 3 minutes. Stir in the minced garlic and cook for another 60 seconds until fragrant. Do not let the garlic brown or it will turn bitter.

Combine the liquids and spices (2 mins): Pour in the beef broth, ketchup, apple cider vinegar, and Worcestershire sauce. Whisk well to combine. Add the yellow mustard, dark brown sugar, and all of your dry spices (black pepper, chili powder, cumin, and salt).

Simmer and reduce (15-20 mins): Bring the mixture to a gentle boil, then immediately turn the heat down to low. Let it simmer uncovered for 15 to 20 minutes, stirring occasionally. You want the flavors to meld and the sauce to reduce slightly, but remember: it should remain a relatively thin, pourable sauce.

Strain and serve (2 mins): If you prefer a perfectly smooth dipping sauce, pour it through a fine-mesh strainer into a jar to remove the bits of onion and garlic. Otherwise, leave them in for a more rustic backyard texture. Serve the sauce warm alongside your sliced brisket or sausage.

Pitmaster Tip: This sauce tastes even better the next day. Make it ahead of time, let it cool completely, and store it in a mason jar in the fridge. When it’s time to eat, warm it up on the stove or smoker before serving—cold sauce on hot brisket is a backyard cardinal sin!
